Wine making

Conventional viticulture. Mechanical harvesting. Fermentation in Epoxy-resin-lined-cement vats, Temperature-controlled fermentation, Traditional vinification, Regular bâtonnage (stirring up the lees), Remontage. Ageing in epoxy-resin-lined cement vats, Screw caps. Sols argilo-calcaires.

Appareance

Garnet red colour, intense, deep purple highlights. Belle robe grenat fonçé et profond aux reflets violines

Nose

Complex, fruity, thyme aromas, sweet pepper aromas, slight cherry aromas, slight black fruit aromas, subtle blackberry aromas, slight black pepper aromas, slight liquorice aromas. Le nez est arqué par des notes épicées (poivre) et d'herbes de la garrigue (pointes de thym)

Palate

Delicate, round, slight thyme hints, liquorice hints, black fruit hints, soft tannin, smooth tannin, sweet tannin, smooth, structured body, good intensity, good length. Belle robe grenat, foncée et profonde aux reflets violines. Le nez est marqué par des notes épicées (poivre) et d'herbes de garrigue (pointes de thym). La bouche est ronde et souple, avec des tanins présents et fondus. On retrouve du fruit noir, du poivre et de la réglisse; Jolie complexité pour cette cuvée avec de la gourmandise. Très bien !!!
